We usually associate summers with a picture of the sun bearing down on us with its dry heat, trying to sap our energy and leaving us huffing and puffing. However this season also brings with it, it’s very own godsend in the form of the fabulous mango. Mangoes always brings out the inner child in us and with it a set of delicious memories that one can always relate to when it comes to summers.

The mango is celebrated across India in a variety of ways. The tartness of a raw green mango can be used to add a tarty punch to curries whereas the sweet and fleshy ripe mango is an unrivaled choice for preparing sweets, soulful drinks and snacks.

 

Here are a few delicious mango dishes from across India which we think are perfect to beat the heat this summer:

The Amrakhand or the mango Shrikhand is a soothing dish which is savoured in homes across Maharashtra. Made with hung curd using traditional techniques passed down through the generations, it is usually served as a part of a meal along with Rotis and Puris. It is best enjoyed as is or with a scoop of vanilla ice cream. It is a perfect balance of the sweet and the sour, thanks to the use of a ripe and fruity mango pulp.

This sweet and sour curry from Kerala uses small ripe mangoes, grated coconut and yogurt. It is traditionally served as a part of the Sadya feast during the Onam festival. It is best accompanied with rice, ghee and papads.

With a perfect balance of the sour and sweet elements of the raw mangoes and a creamy grated coconut, this dish is known for its subtle flavours and is best enjoyed with steamed rice. The vegetarian version without prawns is equally flavoursome as well.
