Mangoes always brings out the inner child in us and with it a set of delicious memories that one can always relate to when it comes to summers.
The mango is celebrated across India in a variety of ways. The tartness of a raw green mango can be used to add a tarty punch to curries whereas the sweet and fleshy ripe mango is an unrivaled choice for preparing sweets, soulful drinks and snacks.

The Amrakhand or the mango Shrikhand is a soothing dish which is savoured in homes across Maharashtra. Made with hung curd using traditional techniques passed down through the generations, it is usually served as a part of a meal along with Rotis and Puris. It is best enjoyed as is or with a scoop of vanilla ice cream. It is a perfect balance of the sweet and the sour, thanks to the use of a ripe and fruity mango pulp.
Goan Mango curry
Locally known as the Amilechi Uddhamethi, this Konkani curry is popular in Goa. It is prepared with raw mango, grated coconut and jaggery. Urad dal and Methi are used for tempering this curry.
Raw Mango Rice
There are several variations of raw mango rice made across south Indian kitchens. It is a cousin to the fabled lemon rice with the added tanginess of the grated green mangoes.
Malvani Amba Dal
The humble Malvani Amba Dal is a traditional Marathi dish that any mango lover would relish. It is prepared using mashed Chana Dal (split Bengal Gram) along with grated raw mango and is served as a side dish with roti or rice.
This sweet and sour curry from Kerala uses small ripe mangoes, grated coconut and yogurt. It is traditionally served as a part of the Sadya feast during the Onam festival. It is best accompanied with rice, ghee and papads.
